Sprout Superfood Salad

2 tbsp quinoa More products
2 heads of broccoli cut into florets More products
120g fresh peas, simmered for 3-4 mins OR

1/4 cucumber cut into slim batons More products
1 handful alfalfa sprouts Available only in our Edinburgh shops More products
2 tbsp of a mixture of lightly toasted pumpkin,sesame and sunflower seeds:
pumpkin seeds More products
sesame seeds More products
sunflower seeds More products
1/2 avocado, cut into pieces More products
1 small handful of flat leaf parsley chopped More products
1 small handful of mint chopped More products
2 dsp freshly squeezed lemon juice More products
4 tsp extra virgin olive oil More products
100g of feta cheese cubed

Method

  • Cover the quinoa with cold water in a small pan, the water level to be a couple of cm above the grain and let it simmer gently until the water has evaporated.
  • This takes about 15 mins then let it cool down.
  • Steam the broccoli until slightly crunchy.
  • In two bowls, build your salad in layers, broccoli, peas, cucumber, feta, alfalfa sprouts, seeds, avocado, quinoa and topped with the herbs
  • Dress the salad with the lemon juice and oil just before serving.
