Super Asparagus Wraps

A great entree to enjoy either on your own, or garden party style! Also make a super healthy side dish to go with barbecued vegetarian burgers !

6 asparagus stalks, sliced thinly along a diagonal

Method

  • Assemble all the ingredients together and chop the chilli, celery, onion, asparagus and tomato as directed above.
  • Set aside the asparagus tips for now.
  • Mash the avocado and chilli together in a large bowl.
  • Then add in the celery, onion and asparagus stalks.
  • Squeeze some lemon juice into the mixture and add the pumpkin seeds.
  • Roll both the cabbage leaves into cones adding half the sliced tomatoes to each of them.
  • Next also add the green stuffing.
  • Finally, add the asparagus tips, so that they are sticking out of the top of each cone.
  • Garnish with the remaining pumpkin seeds and a couple of lemon wedges. Enjoy!
