2 carrots, thinly sliced More products
2 garlic cloves, crushed More products
1 1/2 tsp ground cumin More products
1/2 tsp black pepper More products
1/4 tsp sea salt More products
1 red pepper cut into 2.5cm pieces More products
1 medium courgette thinly sliced This item is only available in our high street shops. More products
1 x 400g can chickpeas rinsed and drained More products
125g raisins More products
3 tbsp freshly chopped parsley This item is only available in our high street shops. More products

Method

  • Heat the oil in a large frying pan.
  • Add the onion, turnip, carrots, carrot, garlic, cumin, pepper and salt and cook over medium - high heat for 6 mins approx stirring occasionally.
  • Add the pepper and courgette, mix well and cook for 2-3 mins stirring occasionally.
  • Add the chickpeas, raisins and parsley, mixing well and continue to cook, stirring from time to time for 5 mins.
  • Serve hot.
