Chickpea and garlic soup

2 cloves garlic crushed More products
1 bay leaf More products
175g dried chickpeas, soaked overnight More products
1.2 l vegetable stock More products
75g sweetcorn More products
1 tbsp tamari More products
salt More products
ground black pepper More products

Method

  • Heat the oil, add the onion and saute gently.
  • Then add the garlic and bay leaf and cook for a further 5 mins.
  • Drain the chickpeas and add to the pan together with the stock, bring to the boil and simmer for 1 1/2 hours or until the chick peas are tender.
  • Add the sweetcorn, tamari and seasoning.
  • Leave to cool slightly, remove bay leaf and puree in a food processor or blender.
  • Serve with mozzarella croutons.
