Chickpea and Avocado Salad Recipe

Chickpeas, like all pulses, are high in fibre and protein, making them an all-round health food. Just one cup of cooked chickpeas provide us with half our recommended daily fibre intake. They are also a good source of phytoestrogens. Don't be fooled by how easy this salad is to put together, it is really delicious and very filling.

You will need

100g or abut 1/2 cup dry chickpeas, soaked overnight and cooked until soft, OR More products
1 can chickpeas, rinsed and drained More products
1/2 cucumber, finely chopped More products
2 tomatoes, chopped More products
1/2 small red onion, finely chopped More products
1 clove garlic, crushed More products
2 Tbsp olive oil More products
1 lemon, juiced More products
1/4 tsp sea salt More products
freshly ground black pepper, to taste More products
1 ripe avocado, halved and sliced More products
a little gomasio for garnish, optional More products

Method

  • Assemble all the salad ingredients except the avocado in a medium sized bowl. Mix and taste test.
  • To serve, divide the salad into 2 plates, and top each plate with an avocado half. Sprinkle some gomasio on top.
