Chickpea and halloumi BBQ burgers

Who doesn’t like falafel, I ask you? These are like a halloumi-falafel.

You will need

2 x 400g tins chickpeas, rinsed well and drained More products
1 small bunch spring onions OR More products
1 small onion, roughly chopped More products
4 garlic cloves More products
1 bunch fresh parsley More products
2 green chillies, optional More products
2 tbsp plain flour OR More products
2 tbsp gluten-free flour More products
half a tsp ground black pepper More products
half tsp cayenne pepper More products
2 tsp ground cumin More products
1 tsp ground coriander More products
1 tsp salt flakes, optional More products
250g halloumi, grated or chopped fine

  • Put all the ingredients except the halloumi in a food processor and process until broken down.
  • Tip the chickpea mixture into a bowl, mix in the halloumi, and form into 6 burgers.
  • You can either cook these in a frying pan with a little olive oil until golden or even better BBQ for 2-3 minutes each side (just brush them with oil beforehand to stop them sticking).
  • Serve in grilled pittas with houmous, lettuce and pickled chillies.
