Vegan Tofu Fajitas Recipe

Traditionally, fajitas are grilled strips of meat, sometimes cooked with onions and bell peppers and served with tortilla wraps and a variety of condiments such as salsa, guacamole, sour cream, shredded lettuce and coriander. For these delicious vegan fajitas, strips of smoked tofu are marinated in a tasty homemade cumin and cinnamon fajita spice mix before being fried in a cast iron skillet along with onion and rainbow bell peppers. You could also add other seasonal vegetables such as asparagus in the spring.

Method

  • Start by grinding the black peppercorns and the cumin seeds for the marinade, using a spice or coffee grinder or a pestle and mortar.
  • Put the tomato puree, lemon juice, 1 tablespoon rapeseed oil, freshly ground cumin and black pepper, ground cinnamon, smoked paprika and chilli flakes in a shallow bowl and mix until well combined. Add the tofu strips, coat them in the marinade as well as you can, and allow them to marinate for a few hours if possible.
  • Heat the remaining tablespoon rapeseed oil in a cast iron skillet over medium heat. Add the onions, bell peppers and tofu strips along with the marinade and stir fry for about 5 minutes, until fragrant.
  • Serve with warmed tortilla wraps, lettuce leaves, sliced avocado or guacamole, soy yoghurt or homemade vegan cashew sour cream and lots of fresh coriander leaves.
