Spicy Squash Soup

You will need

1 tbsp olive oil More products
1 clove of garlic (minced) More products
2.5cm  piece of ginger (minced) More products
1 onion More products
1 butternut squash, peeled and cubed More products
2 chillies, finely chopped More products
1 tsp ground cumin More products
1 tsp coriander More products
2 large tomatoes, diced More products
2 tbsp dessicated coconut More products
1 pint vegetable stock More products

Method

  • Heat the olive oil in a saucepan.
  • Add the ginger, garlic and onion (diced) and cook gently.
  • When the onion is soft, stir in the butternut squash, chillies, cumin and coriander and then the chopped tomatoes.
  • After a minute, add desiccated coconut and vegetable stock.
  • Simmer gently for 20 minutes, topping up with water as necessary.
  • Now let the soup cool before you blend it, and reheat.
  • Optional - garnish with sliced red chilli and toasted coconut.
