About Organic Fresh Ginger

The juice from ginger roots is often used as a spice in Indian recipes, and is an quintessential ingredient of Chinese, Japanese and many South Asian cuisines for flavouring dishes such as seafood or goat meat and vegetarian cuisine. They can also be steeped in boiling water to make ginger tea, to which honey is often added; sliced orange or lemon fruit may also be added.

Fresh ginger can be substituted for ground ginger at a ratio of 6 to 1, although the flavours of fresh and dried ginger are somewhat different. Fresh ginger may be peeled before eating. For longer-term storage, the ginger can be placed in a plastic bag and refrigerated or frozen.

Ginger is low in saturated fat, and very low in cholesterol and sodium. It is also a good source of Vitamin C, Magnesium, Potassium, Copper and Manganese.

Ginger is a staple in our home. We use it for juicing, tea, cooking lentils and in general Punjabi cuisine. Ordered ginger in my first order and it was really fresh, really pleased.

Try a chunk of this is your morning juice - it really wakes you up. Better than coffee.

Vegan Ethiopian Red Lentils Mesir Wat Recipe

Summary: Misr Wat or Mesir Wat is a vegan Ethiopian stew made from red split lentils and the famous Ethiopian Berbere spice mix. Some Ethiopians, for religious reasons, eat an exclusively vegan diet, and many eat vegan dishes on special 'fast' days. This explains the abundance of vegetarian and vegan specialties. Ethiopian cuisine is one of the most flavoursome cuisines in Africa, and this red lentil stew is no exception. You can of course use a ready-made, shop-bought Berbere since mix, but I promise you that if you make your own, you will be rewarded by a rich and complex tantalising flavour that is well worth the small effort of assembling the all very common ingredients (except perhaps the fenugreek, just leave it out if you have trouble sourcing it) needed to make your own Berbere spice mix. Misr Wat is traditionally served with Injera, a soft sourdough flat bread, but you can also enjoy it with a crispy green salad.

Lime and Ginger Seville Orange Marmalade Recipe

Summary: Seville Oranges are only in season for a few weeks in January. This year, try your hand at making your own Seville Orange Marmalade and we promise it will be worth the effort, because you simply can't beat homemade marmalade. And why not flavour it with lime and ginger ? You really do need to buy them Organic, as you will be eating the peel. Note on sugar : Most traditional recipes call for a 1:2 ratio of Seville oranges to sugar. But that produces a fairly sweet marmalade. We find that a 1:1 ratio of oranges to sugar, the same ratio as for jam, is enough to preserve the marmalade, and produces enough sweetness, providing you enjoy the slight bitterness, and you are cutting the sugar content by half ! But if you prefer a sweeter marmalade, please feel free to use a 1:1,5 or even the traditional 1:2 fruit to sugar ratio. Depending on how much sugar you use, this recipe will give you 3 to 6 standard jam jars.

Vegan Classic Red Lentil Soup with Spicy Roasted Chickpeas Recipe

Summary: Red lentil soup is a vegetarian staple, and so it should be : it is easy to make, the ingredients are cheap, and it is very healthy. This one is lightly spiced with whole cumin seeds and topped with fresh coriander, crunchy roasted cumin paprika and cayenne chickpeas. If making for a packed lunch, pack the roasted chickpea separately to keep them crunchy. Feel free to double the recipe for the Roasted Spicy Chickpeas, as they are a nice change (and much better for you) from any occasion where you would serve the usual chips or roasted peanuts.
