Carrot and Sesame BBQ Burgers

There is no excuse to miss out on the essential BBQ Burger and these sesame flavoured ones can be dressed up or down depending on the occasion. You can make them gluten free by using gluten free breadcrumbs and gluten free burger buns.

Method

  • Process a third of the grated carrot in a food processor with the chickpeas, onion, tahini, cumin and egg. Once well combined, scrape the mixture out into a large bowl.
  • Heat 1 tbsp olive oil in your largest frying pan,  and stir fry the other 2 thirds of the carrot for about 10 mins, until the carrot is softens and turns a golden colour.
  • Add the cooked carrot to the breadcrumbs, lemon zest and sesame seeds. Season with sea salt and freshly ground black pepper and mix well with your hands.
  • Divide the mixture into 6, then shape into burgers using wet hands to prevent sticking. Cover and chill until serving.
  • Mix the yogurt with the lemon juice and 2 tbsp tahini and chill this too.
  • Fire up the barbecue, or heat a non stick frying pan and brush the burgers with the remaining olive oil. before cooking them for 5 mins on each side, until golden and crisp.
  • Meanwhile warm or toast the buns by sitting them on the barbecue alongside the burgers.
  • When the burgers are ready, spread each bun half with some of the lemon tahini yogurt, add a few avocado slivers, top with the burger, onion rings and rocket. Finish with a drizzle of chilli sauce or ketchup.
