Ultimate Raw Vegan Three Layer Cayenne Pepper Chocolate Brownies Recipe

These are the best, intensely chocolatey, raw vegan chocolate brownies. Three layers of deliciousness : a rich fudgy chocolate base, a smooth and creamy chocolate caramel middle and a crunchy chocolate topping. With sea salt to bring out the chocolate flavour, and a little cayenne pepper for a kick, but feel free to leave it out if you prefer, or if sharing with children.

1/2 cup almond milk More products
1/3 cup melted raw chocolate (or raw cacao liquor)

Method

  • In a food processor, process the walnuts, 1 cup of dates, cacao powder, hemp seeds, linseeds, cayenne pepper, cinnamon and salt until well combined and sticky, but do not over-process as you want to keep some crunchy walnut bits.
  • Remove 2/3 of the mixture and place it in a square dish lined with grease-proof paper, approximately 1/2 inch thick.
  • Add remaining dates and almond milk to the food processor and process until you achieve a smooth and creamy caramel-like texture. Add more milk if necessary.
  • Pour this creamy chocolate caramel over the brownie base and place in the fridge or freezer to set.
  • Gently melt the raw chocolate or raw cacao liquor over a water bath.
  • Remove the brownies from the fridge / freezer and top with the melted raw chocolate or raw cacao liquor. Return to the fridge for at least 15 mins to set.
  • To serve, take the brownie cake out of the dish by lifting the grease-proof paper by the corner. Transfer onto a chopping board and cut the brownie into squares of your desired size, using a sharp large knife, running the blade under hot water for a cleaner cut.
  • If you can stop everyone from eating them all, any leftovers will keep for well over a week in the fridge, and much longer in the freezer. Just allow them to thaw at room temperature before serving.

Tracylazenbypaterson@gmail.comIt may be a reflection of my food processor, but I needed to process the main mix in batches. Also I will use hulled hemp seeds next time as the whole seeds don't process completely and you're left with sharp shards in the mix. Taste-wise, it's decadent and pretty amazing.
