Raw Vegan Mixed Berries Tart Recipe

Stunning and delicious yet super easy to make, this raw berry tart will impress your friends and family. It has a nuts and dates pastry, a cashew and coconut based cream and is topped with berries. Use fresh berries in the summer when they are plentiful, and just use frozen berries when they are not in season. Would also make a fine Valentine's Day treat !

1/2 cup or about 75g whole almonds More products
1/2 cupr or about 75g brazilnuts More products
1/2 cup or about 50g desiccated coconut More products
2 to 4 pitted dates

pinch fine sea salt More products
1 or 2 Tbsp filtered water
Cashew Vanilla Custard :
1/2 cup or about 75g cashew nuts, soaked overnight, then rinsed and drained More products
1 cup or 100g coconut oil, gently melted More products
1 to 2 Tbsp malt rice syrup OR More products
1 to 2 Tbsp rice syrup

Method

  • FIrst, process all the crust ingredients in the food processor until crumbly. Add a little water to help the mixture stick. Pour out into a 20 to 23 tart pan and using your hands, flatten the mixture to create a compact tart crust covering the bottom of the dish and coming up the sides as well. Put in the refrigerator to set while you make the custard.
  • For the custard, simply blend all ingredients in a high speed blender. Start with 1 Tbsp rice syrup, taste and only add the extra Tbsp if you need it. Pour the custard over the crust, spreading in evenly.
  • At this stage, return the crust and custard to the refrigerator to set for about 30 minutes, then top with the berries. Alternatively, top with your berries, and put the whole in the refrigerator for several hours to set.
  • Will keep in the fridge for up to a week.
