Carrot Pancakes

Ingredients: 100g carrot grated; 1 small onion very finely chopped; 175g potato grated; 2 free range eggs lightly beaten; 1 heaped tbsp plain flour; 1 tbsp chopped fresh parsley; 1 tsp marjoram; salt; salt and pepper; oil for frying

Can also be served as a side dish.

Method

Place the carrot, potato,onion and eggs in a large mixing bowl and mix well.
Stir in the remaining ingrdients and mix well.
Heat 1 tbsp of oil in a large frying pan and when hot drop 2 tbsp of the carrot mixture into the pan and flatten to around 10 cm in diameter.
Cook for a few mins on each side until golden brown.
Drain on kitchen paper and keep warm whilst you cook the remaining pancakes.
Serve hot with a dill sauce....
