About Organic Aubergine

Aubergines are a good source of fibre and folic acid. The colour of the skin is a result of the presence of anthocyanins (compounds with antioxidant properties.) Although often associated with warmer, more exotic lands, the striking looking aubergine is widely cultivated in Britain. Its subtle and distinctive combination of textures and flavours - smooth, fleshy, creamy, smoky - make it a versatile and beguiling component of many great dishes.

I was never very keen on Aubergene until I tried it in the vegetable casserole I found in the recipes on this site - now I wouldn't leave it out for any reason.

Organic Ratatouille Recipe

Summary: Ratatouille is a traditional French mixed vegetable stew, from the region of Nice, in Provence. Onions, garlic, tomatoes, bell peppers, courgettes and aubergines are gently stewed together until soft and juicy. Be mindful not to cut the vegetables too small, about 1 inch cubes (2,5cm) is great to make sure the vegetables keep their structure and don't go mushy. Feel free to leave out the aubergines if you don't like them. Serve the ratatouille as a side dish or as a main dish with brown rice, wholemeal pasta or quinoa.
