About Organic Raw Cacao Nibs

Raw Organic Criollo Cacao Nibs from Real Foods. The cacao beans are simply cracked and have their shells removed leaving the raw nibs (this process is called winnowing). Great for adding a natural bitter crunch to cookies and other baked goods, for making your own chocolate or simply for nibbling if you like a raw snack.

Brim full of goodness, and especially rich in magnesium, sulphur and antioxidants, cacao is said, amongst other things, to encourage wellbeing through the release of anandamide, a bliss endowing compound. Known as the "food of the Gods" this sugar free, wondrous natural chocolate can be savoured and celebrated here on earth. Soil Association certified they make a potent nourishing snack that keeps you going !

The cacao beans are sourced from plantations across Peru. They are grown organically by local farmer cooperatives using traditional farming methods. Unlike many crops grown on a large scale, cacao cultivation doesn't drive deforestation as the cacao plant needs the shade these trees provide. Our supplier is working with growers who are promoting sustainability and protecting biodiversity. These Cacao Nibs are raw. Most cacao nibs are roasted (it helps to bring out the flavour) but these are dehydrated as a heat-free alternative before winnowing.

Superfood Trail Mix With Cacao Nibs Recipe

Summary: Although commercial trail mixes are widely available, I like to make mine, so that it has exactly what I like, and none of what I don't like so much. Also known as GORP (Good Old Raisins and Peanuts or Granola, Oats, Raisins and Peanuts) in the trekking and hiking community, trail mix, a combination of nuts and seeds and dried fruits, sometimes with chocolate, is the perfect snack while hiking, as it is lightweight, does not require refrigeration and provides a quick energy boost from the dried fruits and more sustained energy from the fats and the protein in the nuts and seeds. In my own version, I use my favourite nuts : creamy brazil and macadamia nuts, coconut chips, super healthy goji berries, super sweet raisins, super mellow mulberries, and finally, I add raw cacao nibs, which are the original chocolate chips, for a cacao hit. For a fully raw trail mix, be sure to use raw coconut chips. Makes 650g : about 4 cups or 1 litre. (16 generous 1/4 cup servings)

The Ultimate Chocolate Mousse Recipe

Summary: Light and aerated, this is the simplest and the best chocolate mousse I have ever eaten, and the only chocolate mousse recipe I have been using for years. It is as easy to make as melting chocolate and whisking egg whites, yet it produces the most deliciously chocolatey chocolate mousse. No added sugar, none of the fuss of using cream or milk, or the egg yolks. Use 2 egg whites to 100g chocolate for a rich chocolate mousse, and 4 egg whites to 100g chocolate for a lighter mousse and a less intense chocolate flavour. Make this when you have egg whites left from another recipe, or use the egg yolks to make custard, mayonnaise, ice cream, lemon curd, or another recipe. You can make this using dark chocolate (anything from 60 to 80% cacao), milk chocolate or white chocolate. And for a creative and striking dessert, multiply the recipe quantities by 3 and alternate layers of dark, milk and white chocolate in tall and pretty glasses, topped with berries or fruits of your choice and cacao nibs.
