Vegan Smoked Tofu and Vegetable Kebabs Recipe

These delicious vegan kebabs are quick and easy to make, using flavoursome smoked tofu and a mix of mediterranean vegetables. They would also be fun to make and eat with children (help the younger ones with the skewers), or to take along for a picnic in a park, at the beach or in the garden. Add ground cumin and coriander and perhaps even some cayenne pepper for more of a middle eastern flavour. If you are cooking the kebabs on a barbecue, you can soak the wooden skewers in water for about an hour beforehand, to stop them from burning.

8 cherry tomatoes (or large sliced tomato) More products
1/2 onion More products
1 tbsp oil for baking (avocado is a good option as it withstands high temperatures) More products
pinch dried basil More products
pinch dried thyme More products
pinch ground cumin seeds, optional More products
pinch ground coriander, optional More products
3 pinches sea salt More products
3 pinches pepper More products

Method

  • Cut tofu, courgette and bell pepper into large pieces, halve cherry tomatoes, slice onion into chunks.
  • Put tofu and vegetables into a bowl, add oil and seasoning, and mix to coat evenly.
  • Spear tofu and vegetables onto skewers and cook in grill oven, on grill pan or on barbecue.
  • Serving suggestion: serve the kebabs with dairy free yoghurt, garlic and mint dip and a side of rice if you wish. See our Vegan Yoghurt, Garlic & Mint Dip recipe.
