Raw Vegan Grain Free Wild Rice Paella Recipe

Wild rice is actually not rice at all. Although like rice, it is the seed of an aquatic grass, it is a completely different species from rice altogether. Wild rice is slightly lower in calories than brown rice for example, so it can be a high nutrient, high fibre alternative. It can be cooked for about 30 minutes, or soaking in warm water for a day or 2 will soften it enough to eat. So whether you are avoiding grains or just looking to add some variety to your diet, you will be happy you tried this wild rice paella.

You will need

about 100g fresh shelled green peas (if shelling your peas yourself, you will need 200g to 250g whole pea pods), or frozen
the kernels from 1 sweetcorn ear, or about 150g fresh, frozen or canned sweetcorn

1 tsp sweet paprika More products

Method

  • First you need to soak the wild rice ahead of time, at least 24 hours, ideally 48 hours, until most grains have bloomed, that is they have split, softened and revealed their white interior. Do change the water on the second day if you soak your wild rice for more than 24 hours.
  • When your wild rice is soft and you are ready to make your raw paella, rinse the rice and set it aside to drain thoroughly.
  • Put the olive oil in a large bowl, add the saffron fingers, crushing them as much as possible between your fingers.
  • Next, prepare all your vegetables : shell your peas, shave the corn kernels of the cob using a sharp knife or defrost your frozen peas or corn / rinse and drain canned corn. Dice the bell pepper, tomato and avocado. Add everything to the bowl, along with the drained wild rice.
  • Season with sea salt and pepper to taste, mix well and serve topped with a little fresh parsley or coriander.
