Raw Vegan Cheesy Green Black Red Kale Chips Recipe

Most (all ?) of us don't eat enough green leafy vegetables. Kale is perhaps the healthiest of all, and kale chips are the tastiest way to include more of this green leafy wonder into your diet. The nutritional yeast gives them a lovely cheesy flavour, without the dairy. This recipe uses 3 sorts of kale and is for raw dehydrated kale chips, so you need a dehydrator. Alternatively, you can use an oven set on the lowest heat possible.

You will need

1 bag or about 200g green kale AND More products
1 bag or about 200g black Cavalo Nero kale AND More products
1 bag or about 200g red Russian kale More products
100g cashew nuts, ideally pre-soaked for at least 4 hours More products
1/2 cup or 125 ml water
2 Tbsp nutritional yeast More products
1 Tbsp baobab powder, optional More products
1 very small shallot More products
2 garlic cloves More products
1/2 tsp crushed chillies More products
1 tsp miso More products
1 lemon, juiced More products

Method

  • Wash and spin dry the 3 sorts of kale. You want the kale to be as dry as possible, you can even use a clean kitchen towel to pat dry it. Discard the hard stems and roughly tear the kale into bite-size pieces.
  • Put the cashews along with all the other ingredients in your blender and blend until smooth. Pour the dressing over the kale and massage it into the kale, making sure the kale is perfectly coated.
  • Spread the prepared kale out onto 3 dehydrator sheets, in a single layer, and dehydrate for at least 12 hours or until crunchy.
  • If using your oven, set it on the lowest temperature and rotate the baking trays every now and then ; you can also leave the door slightly ajar if you need to.
