Plum Cake

Delicious, buttery cake with zesty seasonal plums. Perfect on its own or with a dollop of vanilla ice cream on the side.

230g vegan block, chilled (vegan equivalent of butter) Available only in our Edinburgh shops More products
3Tbsp of aquafaba (or one egg, if making vegetarian option) More products
1.5tsp vanilla extract More products
1.5tsp baking powder More products
pinch of salt More products
Icing sugar for sprinkling on top More products
700g plums
1 heaped Tbsp Arrowroot powder (or potato starch) More products

Method

  • Destone plums and cut into quarters. Cover with starch, mix and set aside.
  • In a large bowl mix together flour, sugar, baking powder, vanilla extract and salt. Grate in vegan block in parts, mix with the dry ingredients each time. This makes it easier to combine them all. Add aquafaba, then start kneading with your hands on tabletop. Once a firm dough ball is achieved - divide into two equal parts.
  • Grease 28 diameter cake tin or use parchment paper. Cover cake tin with one part of the dough. Add plums on top, skin down. Crumble the other part of dough on top, covering evenly.
  • Bake for 45 - 50 min. in 190 degrees (fan oven).
  • Let it cool completely, before removing from cake tin.
  • Sprinkle icing sugar on top.
  • Enjoy!
