Real Foods Vintage Vegan Fat And Sugar Free Christmas Pudding Recipe

Straight out of our archives, this is our Vintage Christmas Pudding recipe, that we used to give out to our customers in the 70s. Vegan, fat free and with no added sugar, this recipe has stood the test of time. Make ahead, store in a cool place and steam before serving on Christmas Day.

You will need

75g wholewheat flour More products
crumbs made from 3 slices of wholewheat bread (about 150g) Available only in our Edinburgh shops More products
350g dried mixed fruit More products
50g natural coloured cherries More products
75g chopped almonds More products
2 tbsp concentrated apple juice More products
1/4 tsp ground ginger More products
1/4 tsp mixed spice More products
1/4 tsp ground cinnamon More products
1/4 tsp ground nutmeg More products
grated rind of one small lemon More products
350ml Guinness

Method

  • Mix all the pudding ingredients together in a medium to large bowl, cover and leave to stand overnight.
  • Spoon into 1 large (2 pints) or 2 small (1 pint) lightly greased pudding basin(s), cover with greaseproof paper tied around the top or lids.
  • Steam for 4 hours or pressure cook for one and a half hours.
  • Once steamed and cooled, will keeps for up to four weeks in a cool place.
  • Steam for 2 hours before serving.
