About Ground Mixed Spice

Arrowroot powder is a fine, white powder extracted from the root of the West Indian plant Maranta arundinacea. This versatile ingredient resembles cornstarch in both appearance and texture, but it is unique in that it has no distinct flavor, making it an excellent choice for a variety of culinary applications.

One of the primary uses of arrowroot powder is as a thickening agent in sauces, fruit pie fillings, glazes, and puddings. Unlike mixtures made with flour or cornstarch, arrowroot thickens at a lower temperature, making it ideal for recipes that require gentle heating. To use arrowroot effectively, mix it with cool liquids before incorporating it into hot mixtures, then cook until the desired thickness is achieved. It is important to remove the mixture from heat immediately to prevent thinning.

Summary: This rich fruit cake is just unbelievable : it it made without eggs, butter or margarine or oil, has no added sugar, yet it tastes just as delicious and decadent as you would expect any good Christmas cake to. The magic trick here is to replace the butter-sugar-egg mixture with dates blended with water. Using wholemeal flour further increases the fibre content, making this Christmas cake healthier. I used mixed vine fruit with peel, but the peel does contain sugar. To keep it really sugar free, stick to mixed vine fruit : sultanas, raisins and currants, and be sure to choose those with no added sugar. Also, I chose to decorate the cake with some home-made, low sugar vegan marzipan on the top, but beware that this would also increase the sugar content, unless you make your marzipan with xylitol.
