Cornmeal Vanilla Honey Muffins

A delicious sweet, yet a little savoury, recipe for cornmeal muffins. Perfect winter warmer!

1/4 cup or 50g demerara sugar More products
2 tbsp baking powder More products
1 tsp fine sea salt More products
4 eggs

2/3 cup or 160ml olive oil OR More products
2/3 cup or 160ml corn germ oil

3 tbsp runny honey

Method

  • Preheat your oven to 200C or 180 if you have a fan oven and grease and flour 12 large muffin cups. In a large bowl mix together the flours, cornmeal, sugar, baking powder and salt.
  • In another bowl, beat the eggs and then whisk in the milk, melted butter, oil, honey and vanilla.
  • Make a well in the center of the dry ingredients, add the moist ingredients and stir until just combined.
  • Divide the batter evenly into the prepared muffin cups.
  • Bake for about 20 minutes, or until golden brown and the muffins are nicely browned on top.
  • Cool on wire racks and serve warm or at room temperature. Just divine when smeared with some butter !
