Black Bean Burritos

175g tinned sweetcorn More products
1 medium onion chopped More products
Juice of one fresh lime More products
1/2 tsp salt More products
2 tbsp freshly chopped corriander

grated cheddar cheese

Method

  • Place the cumin, chilli powder, black pepper in a large saucepan together with the black beans, corn, chopped onion, lime juice and corriander.
  • Mix well and set aside for 30 mins.
  • Meanwhile, place the rice in a medium saucepan, add salt and plenty of cold water, bring to the boil then reduce the heat and simmer for 20 mins until tender.
  • Preheat the oven to 140 deg cel, gas mark 1.
  • Stack the tortillas wrap in aluminium foil and place in the oven to warm through.
  • Heat the black bean mixture over a medium heat for 10 mins stirring constantly.
  • To Serve: spread a small amount of sour cream onto each tortilla then spoon some hot cooked rice and black bean mixture onto the tortillas.
  • Add a sprinkling of cheese onto each and top with some salsa.
  • Roll up and serve hot.
