Roasted Red Peppers with Goats Cheese and Sweet Potato Mash

Method

  • Set the oven 200 deg cel, gas mark 6.
  • Put the sweet potatoes in first as they take about an hour to cook.
  • Once cooked, split open the skins, scoop out the flesh and mix with yoghurt and black pepper.
  • Bake the peppers for half an hour, cut side down, then turn over and put a few slivers of garlic and half a tomato in each one.
  • Sprinkle with black pepper and return to the oven for 15 mins.
  • Top each pepper half with a slice of goats cheese, sprinkle with thyme and bake for another 5-8 mins until the cheese begins to run.
  • Serve with the sweet potato mash and a green salad.
