You will need

2 tsp olive oil More products
1 medium onion sliced More products
1 cup oat groats More products
1 cup sliced mushrooms More products
2 cups vegetable stock More products
1/4 tsp freshly ground pepper More products
salt to taste More products
2 tbsp finely chopped parsley

  • Heat 1 tsp oil in a heavy medium saucepan and stir in the groats.
  • Cook the groats stirring them for approximately 3 mins to toast them.
  • Add the remaining oil and onions and saute until the onion is soft.
  • Add the mushrooms and cook the mixture for another 5 mins until the mushrooms are wilted.
  • Add the stock, pepper and salt - only if stock is salt free.
  • Bring the mixture to the boil, reduce the heat, cover the pan and simmer the pilaf for about 40 mins, stirring it occasionally.
  • Remove the pilaf from the heat and stir in the parsely.
  • Season with lemon juice, if desired.
  • Garnish with tomatoes.
