Middle Eastern Baba Ganoush Recipe

Baba ganoush is a Middle Eastern spread and dip which is made with aubergine and similar to hummus which is made from chickpeas only. Spread on oatcakes to serve or use as a dip with raw vegetables such as chopped peppers and carrots.

You will need

1 large aubergine More products
1 can chickpeas, rinsed and drained More products
3 cloves garlic More products
60 ml lemon juice

  • Heat oven to 200 degrees / gas mark 6.
  • Slice aubergine in half and bake for around 45 minutes or until soft.
  • When slightly cooled, scoop out the aubergine's creamy flesh. Discard the skin.
  • In a blender or food processor, combine aubergine, chickpeas, garlic, lemon juice, tahini and salt until smooth.
  • Slowly blend in the the olive oil until well mixed.
  • Using a spoon, gently stir in chopped parsley if using.
