We were amazed at how tasty and fresh this salad is, and at the large amount we got in the bag. Served 2 of us for two meals easily, and we like lots of salad. Will definitely be buying again. So tasty could honestly sit and eat out the bag!

Lovely salad i honestly thought i would get a small bag but it was to me a really good size amount for the price you can taste the difference absolutely, plus it lasts me a fair bit too

We have been eating salad almost everyday this summer and the addition of these mixed salad packs to the dinner table has added a great new choice - much nicer than the supermarket packs!

Roasted Golden Beetroot, Onion, Garlic and Freekeh Salad Recipe

Summary: Freekeh is made by roasting or smoking whole green or young durum wheat grain, then polishing it to remove the outer shell. It can then be left whole or cracked to varying degrees of coarseness. Combined with roasted beetroot, onion and garlic, raw rainbow cherry tomatoes, fresh herbs and baby spinach, this makes for a delicious, filling grain salad, perfect for lunch or as part of a picnic spread. You could substitute the beetroot for sweet potato or squash, the tomato for cucumber or other fresh vegetables. I include instructions on how to cook freekeh, but ultimately do follow the instructions on your packet, as the amount of water needed and the cooking time will vary depending on how coarse the freekeh is.

Smoked Tofu and Mushroom Salad Recipe

Summary: For a quick yet satisfying lunch, try our vegetarian salad of warm stir fried smoked tofu and mushrooms and boiled or steamed green beans over a bed of mixed salad leaves and fresh tomato, along with a delicious honey, Dijon mustard and balsamic vinegar dressing. This salad makes for a filling meal thanks to the high protein content of both the tofu and the mushrooms. Green beans are coming into season in May and you can find Portobello mushrooms all year round.

Vegetarian Jersey Royals, Spiced Poached Pears and Roquefort Salad Recipe

Summary: Oh, how I wish you could taste this ! Roasted Jersey Royal potatoes, pear wedges simply poached in water and spices, Roquefort, with mixed salad leaves lightly dressed in a garlic mustard dressing. Feel free to use another blue cheese, if you can't get Roquefort. When poaching fruit, sugar is usually added to the poaching liquid, but I find this isn't necessary. I just leave the sugar out, and the fruits show case their natural sweetness. The flavours in this salad just go so well together ! Serves 2 as a main or 4 as a starter.
