Quick, easy and oh so tasty. Use fresh peas when they are in season, but frozen peas will work too.

Method

Put the butter and the olive oil together in a saucepan over medium heat.
Once the butter has melted, add the onion and cook, stirring continuously until the onions go translucent.
Add the peas and fry for about 5 minutes.
Add the crushed garlic and a splash of water and cook, covered, for about 20 minutes or until the peas have softened.
Check seasoning and add a pinch of sea salt if desired.
Serve with a squeeze of lemon, some crumbled feta and freshly ground black pepper.
The salad is delicious cold too, and any leftovers will keep in the fridge for about a week.
