Traditional Gluten Free Tarta de Santiago Almond Cake Recipe

Tarta de Santiago is a gluten-free traditional Spanish cake made using ground almonds and no flour at all. Simply dust with icing sugar or cinnamon to finish.

You will need

250g ground almonds More products
5 eggs, at room temperature Available only in our Edinburgh shops More products
75g brown sugar OR More products
50g xylitol OR Available only in our Tollcross shop More products
50g honey More products
zest of 1 lemon More products
zest of 1 orange More products
1/2 tsp to 1 tsp ground cinnamon More products
1 tbsp extra virgin olive oil Available only in our Tollcross shop More products

  • Preheat the oven to 180 C and prepare your cake tin : you could use a non stick silicon cake tin, or oil the bottom and sides of the cake tin, then dust with some ground almonds or some coconut flour.
  • In a mixing bowl, beat the eggs like you would do for an omelet.
  • Mix in the sugar / xylitol / honey, lemon zest, orange zest, cinnamon and olive oil.
  • Add the ground almonds and mix until well combined.
  • Pour in your prepared cake tin and cook for about 20 minutes or until the blade of a knife or a toothpick inserted in the centre of the cake comes out clean.
  • Allow to cool in the cake tin.
  • You may decorate the cake with a dusting of cinnamon or icing sugar, and serve with a helping of double cream.
