Spiced toffee and pear crumble

A warm spicy pudding for winter days. The addition of toffee makes it a bit different from other crumbles. Gluten free

1/2 tsp ground cloves More products
4 ripe pears peeled,cored and roughly chopped

200g brown rice flour More products
100g chestnut flour More products
2 pinches salt More products
150g unsalted butter, very cold Available only in our Edinburgh shops More products

Method

  • Pre heat oven to 200 degrees cel, gas 6.
  • Place the sugar in a large saucepan and cook lightly until you have a light caramel.
  • Add the lemon juice and zest, allspice, cinnamon, cloves, pears,apples,and cook for 5-6 mins.
  • Place in a 24cm x 3cm deep baking dish.
  • Place the flours, salt and butter into a food processor and blitz until smooth.
  • Just pulse in sugar do not overwork.
  • Spoon over the pear mixture.
  • Bake for 20-25 mins or until browned and cooked.
  • Serve with ice cream or custard.
