Raw Fruit Cake with Nut Base Recipe

This is a recipe entered in our October 2014 Real Foods Free-from Baking Competition, contributed by Iva Mitsova: My recipe is very simple: I only use organic nuts, dates, fresh fruit and coconut chips which are all available to purchase at realfoods.co.uk. Enjoy your healthy cake. Trust me it's amazing!

Method

  • Put the almonds, cashew nuts, hazelnuts and oats in your food processor and process until the mixture is flour like and starts to stick to the food processor walls.
  • Add the dates and dry mango if using (or any other dried fruit of your choice to give your dough flavour) and blend it together with the nuts and oats mixture.
  • Using a round baking tray, put a baking sheet on the bottom to cover the walls of the tray.
  • Chop the strawberries, bananas and blueberries.
  • Mix the fruit together and add the agave syrup or orange juice to them.
  • Place your fruit on the bottom of the tray.
  • Add the nuts dough on top and pat it slightly to flatten.
  • Put your cake in the fridge for a couple of hours.
  • After it settles, take a flat plate and flip your cake onto it using the baking paper to keep it together. Alternately, you could pat the dough into your cake pan, place in the refrigerator to set for about an hour, and top with the macerated fruit.
  • Decorate with coconut chips and fresh strawberries.
