Raw Orange And Carrot Energy Balls Recipe

Raw energy balls are a very popular snack, generally made from processing nuts or seeds with dried fruits, herbs, spices, superfoods, and then shaping the mixture into balls or flattening them into energy bars. Including vegetables into a sweet treat is a genius trick to help children and adults eat more vegetables, and these Raw Orange And Carrot Energy Balls are a great way to benefit from the health benefits of carrots : beta-carotene, antioxidants, vitamin A, vitamin C, vitamin K, folate, potassium, and more.

You will need

IngredientAdd
1 cup or about 150g almonds OR More products
1 cup or about 150g brazil nuts More products
1/2 cup or about 80g or 10 pitted dried dates More products
1 medium carrot, about 75g More products
1 orange More products
2 Tbsp or about 10g desiccated coconut, plus enough to roll the energy balls in More products

Method

  • Start by grating the zest of the orange, then squeeze and save the juice.
  • Place the nuts, dates, carrots, orange zest and desiccated coconut in your food processor. Process until crumbly, then add orange juice as needed, 1 tsp at the time, to help the mixture hold together.
  • Using your hands to form little balls, rolling them in desiccated coconut as you go along.
  • The energy balls will keep for over a week in an airtight container in the fridge.
