Raw Vegan Cauliflower Tabouleh Recipe

Did you know that you can 'make' couscous from cauliflower ? A great trick for those avoiding gluten or just wanting to make their diets as nutritionally dense as possible : replace regular wheat couscous with grated or finely chopped raw, cancer-fighting cauliflower. Cauliflower is a cruciferous vegetable, known to be astonishingly high in antioxidants and phytonutrients. The base 'cauliflower couscous' would also work as 'cauliflower rice', to go with your favourite curry, chilli or casserole.

Method

  • To make the cauliflower ‘couscous', cut off the outer leaves, the smallest leaves can be left on. Quarter the cauliflower and either grate each quarter using a coarse grater, or roughly chop the cauliflower and blitz it in your food processor until it resembles a rice-like consistency. Discard the toughest parts of the central stem, but the soft part of the stem can be used.  
  • Put the riced cauliflower in a large bowl. Add all the other ingredients, mix, taste and adjust seasoning if necessary. Serve right away or place in the fridge if making ahead of time.
