3 flat tbsp coconut oil More products
1.5 kg fresh pumpkin

Method

  • Melt the coconut butter, or heat the coconut oil, in a frying pan.
  • Add chopped onion and crushed garlic and saute.
  • Peel the pumpkin, cut into small pieces and add to the onion mixture along with the bay leaves, salt and pepper.
  • Cover and cook for 15 mins until the pumpkin is soft.
  • In a food processor, blend the mixture together with the milk until smooth.
  • Stir in the cream and gently reheat.
  • Pour into bowls and top each with a teaspoon of pumpkin seed butter.
