Peas, Asparagus and Avocado Spring Salad Recipe

This very green salad is a great way to celebrate Spring and make the best of fresh green peas and asparagus. Avocado is full of healthy fats and adds creaminess to the salad. It also makes it more satisfying, so does the walnut garnish. Shaving the asparagus as thinly as possible using a vegetable peeler makes it easy to eat raw, but if you wish, you could lightly steam the asparagus.

You will need

1 lettuce of your choice, washed, dried and roughly torn More products
a few very fresh asparagus spears, thinly shaved using a vegetable peeler
2 handfuls shelled fresh green peas
1 avocado, halved, then diced, discarding the skin and the stone More products
a handful of walnuts, roughly crushed More products
2 Tbsp extra virgin olive oil Available only in our Tollcross shop More products
2 Tbsp apple cider vinegar More products
sea salt to taste More products
black pepper, to taste More products

  • Place the shredded or torn lettuce in a bowl, add the shaved asparagus, the peas and the diced avocado, the olive oil and vinegar, season with a little sea salt and black pepper.
  • Give everything a good stir, tasting and adjusting the seasoning if required.
  • Garnish with crushed walnuts before serving.
