Gluten Free Courgette, Poppy Seed And Walnut Tea Loaf Recipe

Just like the carrots in a carrot cake, the courgette (zucchini) gives this tea loaf a beautiful moist texture, without any overpowering courgette taste. It is a great recipe for anyone trying to cut sugar out of their diet, as the cake is solely sweetened with dried fruits. Great served with a cup of tea, toasted or not, buttered or not.

Method

  • Line a loaf tin with baking parchment and pre-heat the oven to 180C/350F.
  • Combine the melted butter, grated courgettes, raisins, currants, sultanas, yoghurt, eggs, walnuts and poppy seeds in a large mixing bowl.
  • Combine the flour, baking powder and salt in a separate bowl.
  • Add the dry ingredients to the courgette mixture, and mix lightly, until just combined.
  • Transfer to the prepared loaf tin, reduce the heat to 150C/300F and bake for about 45 minutes, or until a skewer or a knife inserted into the centre of the cake comes out clean.
  • Allow to cool completely before slicing and serving as is, or toasted and buttered, with a cup of tea.

Leila GreeneThis loaf is so easy to make and turned out beautifully. I am trying to eliminate gluten from my diet and wanted a treat for myself but in fact the whole family enjoyed so looks like I will be making on a regular basis.
