Vegan Green Tropical Superfood Smoothie Recipe

Beat the winter blues with this superfood-packed vegan tropical green smoothie and pretend you are on holiday somewhere wonderful. Perfect for breakfast, a post-workout meal or a snack at any time of the day.

1 tbsp soy lecithin granules (optional, to emulsify and for the phospholipids)

Method

  • First make your nut / seed milk. Blend the poppy seeds, hemp seeds or the almonds with 1 cup filtered water. Drain through a nut milk bag and rinse your blender.
  • Alternatively, you can use the ready-made vegan milk of your choice.
  • Put 3 cups or 750ml of the vegan milk in the blender (if you made your own, add 2 cups of filtered water to the strained milk from stage 1) along with the fruits and vegetables, cut into pieces small enough for your blender to handle easily. Blend until smooth.
  • Add the superfoods (lecithin, baobab and maca). Blend again, adding some or all of the remaining cup or 250ml of water or vegan milk to give your smoothie the desired consistency.
  • Pour into a large glass and enjoy with a plastic-free reusable straw if you wish.
