Gluten Free Walnut and Lentil Burgers

The walnuts in this recipe add a little crunch and the brown rice takes the place of bread crumbs, making these savoury vegetarian burgers a great gluten-free meal.

50g walnuts, chopped More products
1 tsp dried thyme More products
pinch sea salt More products
freshly ground black pepper More products
a little cayenne pepper, to taste More products
2 cups or 400g cooked brown rice, divided (cook about 100g rice) More products
1 and a half cup cooked lentils OR More products
1 tin lentils, rinsed well and drained More products
1 egg

Method

  • Heat olive oil in a large skillet over medium heat. Add carrots, celery, mushrooms, walnuts, thyme, salt, pepper and cayenne and cook together, stirring frequently, until softened, about 5 minutes. Transfer to a large bowl.
  • Process 1 cup rice, the lentils and the egg in a food processor until smooth. Transfer to the bowl with the vegetables, add the remaining rice and the parsley and combine well with your hands.
  • Shape the mixture into about 12 burgers and pan fry them with a little oil. Alternatively, you can grill the burgers on the barbecue.
  • Serve hot with a side salad.
