Falafel Burger with Grilled Halloumi

A tasty and surprisingly simple burger recipe that also teaches you how to make falafel!

Method

  • To make the falafel burgers, put the first eight ingredients in a food processor and mix until a smooth consistency is achieved. Form into six burgers. If they are too runny, add a little more flour.
  • Cover the bottom of a frying pan with about 1mm of olive or vegetable oil to and heat over a medium high ring. When hot, add the falafel and cook until golden (approximately 3 minutes each side).
  • Split the Halloumi Burger Slices into 4, place each cheese slice on a hot grill pan for approximately 1 minute each side until golden brown, and place on top of burger along with the rocket and a little pesto.
  • Serve the hummus on the side.
