Easy Vegan Nut Roast

Wheat free, Gluten free, Dairy free, Vegan. This simple nut roast has pecans, almonds, hazelnuts and cashews for a truly luxurious Christmas or celebration meal.

Method

  • Pre heat your oven to 200 degrees.
  • Chop the onion and the garlic and sweat in a pan with the olive oil until softened.
  • Grate the carrots and add to the pan. Cook for 3 minutes, stirring occasionally.
  • Finely chop the courgettes and red pepper.
  • Crush the nuts roughly (You can use ground almond if you prefer a softer texture.)
  • Transfer the cooked carrots and onion to a mixing bowl, and add the courgette, pepper, nuts and egg replacer.
  • Mix the ingredients well, and season with mixed herbs.
  • Add a dash of tomato puree for colour and flavour.
  • Transfer the mix to a greased baking tin (preferably a loaf tin).
  • Bake in the oven for 30 minutes or until browned.
  • Serve with seasonal vegetables.
