Method

  • Put chopped onions, tomatoes, seasoning and stock into saucepan.
  • Bring to the boil, then simmer for around 25 minutes.
  • Liquidise tofu with a couple of spoonfuls of soup stock until smooth.
  • Pour tofu mixture into the soup stock and continue to blend gently over a low heat for a few minutes.
  • Serve hot.
  • Serving suggestion:  sprinkle with chopped herbs of your choice - basil, chives, oregano, parsley
