Method

Preheat oven to 180 deg cel, or gas mark 4.
Saute the onion and garlic in the olive oil, season and add the mixed herbs.
Add remaining ingredients except the mash and cook on a med heat for about 20 mins.
Spoon the base into an oven proof dish and top with the mashed potato.
You can sprinkle a little grated cheese on top if you like for non vegan option.
Bake for about 30mins or until golden brown.
