You will need

400g can chickpeas drained and rinsed More products
120g chopped hazelnuts,(ground almonds or hazelnuts work as well) More products
1 onion finely chopped More products
2 carrots grated More products
2 tbsp sun dried tomato puree
1 large free range egg beaten

Dried breadcrumbs for coating
4 bread rolls (these are gluten free)
Lettuce leaves

Method

  • In a large bowl mash the drained chickpeas.
  • Stir in the hazelnuts,onions,carrots,tomato puree and egg and mix well. Season to taste.
  • Divide the mixture into 4 and shape into burgers.
  • Coat the outside of each burger with the breadcrumbs.
  • Place in the fridge for 1 hour.
  • Grill or barbeque the burgers for 3-4 mins on each side.
  • Serve in bread rolls with accompaniments of your choice.
