Vegetarian Warm Peas And Feta Salad Recipe

Quick, easy and oh so tasty. Use fresh peas when they are in season, but frozen peas will work too.

You will need

1 onion, finely chopped More products
500g shelled fresh green peas or frozen peas

freshly ground black pepper

Method

  • Put the butter and the olive oil together in a saucepan over medium heat.
  • Once the butter has melted, add the onion and cook, stirring continuously until the onions go translucent.
  • Add the peas and fry for about 5 minutes.
  • Add the crushed garlic and a splash of water and cook, covered, for about 20 minutes or until the peas have softened.
  • Check seasoning and add a pinch of sea salt if desired.
  • Serve with a squeeze of lemon, some crumbled feta and freshly ground black pepper.
  • The salad is delicious cold too, and any leftovers will keep in the fridge for about a week.
