Tofu Quiche with Broccoli

455g broccoli chopped More products
1 x 9''  unbaked pie crust
1 onion finely chopped More products
4 cloves garlic , crushed More products
455g firm tofu, drained More products
120ml soya milk

black pepper to taste More products

  • Preheat oven to 400 deg f, 200 deg cel. Bake pie crust for 10-12 mins.
  • Steam broccoli until tender but still firm.
  • Heat oil in a large frying pan over medium-high heat.
  • Saute onion and garlic until golden.
  • Stir in the cooked broccoli and heat through.
  • In a blender combine tofu, soya milk, mustard, salt, nutmeg, chilli, black pepper, parsley and hard cheese; process until smooth.
  • In a large bowl combine tofu mixture with broccoli mixture.
  • Pour into pie crust.
  • Bake in oven for 35-40mins or until quiche is set.
  • Allow to stand for 5 mins before cutting.
