Raw Vegan Snack Spirulina Cacao And Coconut Energy Balls Recipe

Raw vegan energy balls and bars are super easy to make, very versatile, and make great after dinner treats and midday or post workout snacks. For a basic fail-proof recipe, simply use equal amounts of nuts or seeds and dried fruits, and add a little of as many flavourings as you desire : food-grade essential oils, super foods or spices. These Spirulina, Cacao and Coconut energy balls are a great combination, as the sweetness of the dates, Brazil nuts and desiccated coconut perfectly balance the bitterness of the cacao nibs, and the relatively modest amount of spirulina beautifully blends in without being overpowering. Do try them as an evening treat or as a mid-morning / mid-afternoon or post-workout snack. Makes about 12 energy balls.

You will need

3/4 cup or 100g organic brazil nuts, plus 2 Tbsp coarsely chopped for rolling, if wished More products
1/2 cup or 40g organic desiccated coconut, plus 2 Tbsp extra for rolling in, if wished More products
3 Tbsp or 20g raw organic cacao nibs More products
1 Tbsp coconut oil, optional More products
1 Tbsp spirulina powder More products
2 Tbsp raw organic cacao powder, for rolling in, if you wish

Method

  • Simply put all ingredients except the coconut oil in a food processor and pulse until well combined. For a smooth and uniform texture, process longer. For more crunch and texture, process less.
  • Only add the coconut oil if the mixture is too dry ; you might need to if you are going for a crunchy texture. I find that when I process the mixture long enough to get it fairly smooth, the fats (here the brazil nuts, coconut and cacao nibs) start to release some of their oils, helping to make everything stick together. Alternatively, you could also add a tablespoon of water instead.
  • To shape into energy balls, scoop out some mixture and roll it between your palms. Repeat until you run out of mixture. If you wish, roll the energy bars into coarsely chopped brazil nuts, desiccated coconut or raw cacao powder. Then, if you can wait, allow the energy balls to set in the fridge for at least 15 minutes before serving.
  • To shape into energy bars, transfer the mixture into a small square baking dish lined with baking parchment or cling film. Using your hands or a potato masher, press the mixture down, making sure it is even. Alternatively, transfer the mixture to a clean surface lined with baking parchment or cling film ; place more baking parchment or cling film on top, and using a rolling pin, roll to your desired thickness. Place in the fridge to set for at least 15 minutes before cutting into bars and serving.
  • The balls / bars will keep for over a week in the fridge, or you can also wrap them individually and freeze them, eating them directly from the freezer, as they won't freeze solid and remain soft and chewy.

ember_bright@yahoo.comHi. Thank you for a fab recipe. I would coat these in dark, fair trade chocolate as a Christmas selection of treats for my vegan son. You could put half a walnut, dried cranberry etc on the top. A variation would be to shape it around a piece of dried fruit and drizzle chocolate over the dark coating. I am going to make these at the weekend :o) Em
