Sesame Raisin Biscuits

Baking Sweet

You will need

75g raisins More products
75g sesame seeds More products
240g brown rice flour More products
200g porridge oats More products
pinch of salt More products
270ml unsweetened apple juice More products
30ml vegetable oil More products
1 tsp vanilla extract More products

  • Preheat the oven to 180deg cel, gas mark 4 and lightly oil 2-3 baking sheets or line with parchment paper.
  • Place the raisins in a small saucepan and cover with cold water.
  • Bring to the boil then remove from the heat and leave to soak for 10 mins.
  • Meanwhile, heat a heavy frying pan until very hot, add the sesame seeds and toast for 1-2mins until they start to pop.
  • Drain the raisins then place them together with the rice flour, oats, salt and toasted sesame seeds in a large mixing bowl.
  • Add the apple juice, oil and vanilla and mix well with a wooden spoon.
  • Using floured hands, divide the dough into 12 balls then flatten each ball into a biscuit about 1 cm thick.
  • Place each biscuit on the oiled baking trays setting well apart and bake for 25 mins or until golden brown.
  • Allow to cool on the baking trays before removing,
