About Rice Mirin

It may be used to add depth and balance to stir-fries, sauces and gravies, marinades, dips and noodle broths.

Whilst most mirin nowadays contains sugar and preservatives, Clearspring Rice Mirin is naturally koji fermented from just rice with some salt being added at the end of the process. Mirin is, along with soya sauce and miso, one of Japan's most important cooking ingredients. It is made from glutinous rice that is steamed and mixed with koji, the cultured rice that lies at the heart of so many traditional Japanese foods, and shochu, a traditional Japanese distilled spirit that can be made from rice or other grains.

Thai Bean Burgers Sweet Potato Curls and Chilli Tomato Jam

Summary: For an alternative to the traditional Valentines dinner out, take your beloved's taste buds on a holiday to exotic Thailand with these vegan and gluten-free bean burgers coupled with a chilli and tomato jam, both flavoured with Thai spices. Serve with lovely oven-baked sweet potato curly fries, to let them know how sweet they are. You can also make these on any day of the year, not just on Valentines Day, of course. I like to make them with black beans for their high content of antioxidant and anti-inflammatory phytonutrients, you can use adzuki beans, chickpeas or even cannellini or butter beans. It might seam like a lot of instructions, but please don't let that put you off, as every step is very straight forward.

Avocado and Cucumber Sushi Maki Rolls Recipe from Real Foods

Summary: Making sushi rolls is very easy, and the more you practise your rolling technique the better your rolls will look. You could use white sushi rice if that is all you have, but brown rice has a lower glycaemic index and will give you not only more fibre, more minerals but also more B-group vitamins, known to help digest the carbohydrates in the rice.
