Diced Pineapple makes a healthy and delicious snack for all ages. It also reconstitutes well when soaked for 30 minutes in water, fruit juice, or alcohol. Serve with yoghurt, fromage frais or whipped cream.

I used this diced pineapple in a fruit cake for the first time recently and the whole family loved it. I rinsed the sugar off first so that I didn't make the cake any sweeter. Lovely.
