About Organic Jerusalem Artichoke
The Jerusalem artichoke also called the sunroot, sunchoke, earth apple or topinambur, is a species of sunflower native to the eastern United States. The edible part of the "artichoke" is in fact the root, and has an appearance much like a stem of ginger. Smokey in taste it can be used both raw and cooked. Plant and lift artichoke similarly to the way you would potatoes. Jerusalem artichoke can be served with or without the skin - simply scrub clean and leave it on for maximum nutritional benefit. Much like potatoes, artichoke can be roasted, baked, boiled or steamed, however, it can also be used raw in salads or lightly stir-fried.
